Vancouver World Chef Exchange: A Culinary Celebration
If you’re looking for something delicious to do next month, the 10th annual Vancouver World Chef Exchange is a must-attend event. This culinary extravaganza will feature a remarkable lineup of Michelin Guide-recognized chefs from across the globe, collaborating with beloved local Vancouver restaurants to create unparalleled dining experiences.
A Flavorful Fusion at Boulevard Kitchen and Oyster Bar
Among the standout events of this year’s exchange, Boulevard Kitchen and Oyster Bar will host the esteemed Wilfrid Hocquet, executive chef and co-founder of Margo, a modern bistro in Bangkok that has rapidly gained international acclaim since its recent opening.
Culinary Credentials of Chef Wilfrid Hocquet
Originally hailing from Montpellier, France, Hocquet brings a wealth of experience from some of the most prestigious kitchens worldwide. His culinary journey includes rigorous training at Le Jardin des Sens, a three Michelin-star restaurant, and Louise XV — Alain Ducasse in Monaco. Hocquet has also led Michelin-starred establishments in France, Monaco, Paris, and Thailand, showcasing his versatile skills in the culinary arts.
In 2025, he co-founded Margo, which has recently been honored as the Best Opening of the Year by Michelin Thailand, further solidifying his place in the world of gourmet dining.
An Exclusive Six-Course Menu
During the World Chef Exchange, Hocquet will collaborate with Boulevard’s Executive Chef Roger Ma to craft an exquisite six-course tasting menu. This collaboration will celebrate their shared foundation in modern French cuisine, while also showcasing each chef’s unique culinary influences. Guests can look forward to an impressive menu featuring:
- Elegant seafood preparations that highlight local flavors
- Signature dishes such as Hocquet’s famed black truffle pithivier
- A special dessert crafted by Hocquet in partnership with Executive Pastry Chef Kenta Takahashi
Interestingly, this will not be the first time Hocquet and Ma have worked together; the duo previously collaborated at Restaurant Daniel in New York City, another Michelin-starred establishment, back in 2009.
