Under the expert hands of carpenter Nick Tudor, this bakery features an elongated, curved counter specifically designed to manage the hefty queues that have become synonymous with Toad Bakery’s popularity.

    The Vision Behind Toad Bakery

    Toad Bakery was founded by the dynamic duo Rebecca Spaven and Oliver Costello, who established their first location in Camberwell in 2022. The success of their initial venture prompted them to expand, leading to the opening of the Deptford branch. The interior design of this new outlet was carefully crafted to accommodate the expected hour-long lines, ensuring that customers not only get a taste of Toad’s signature baked goods but also enjoy the experience of waiting.

    A Custom-Tailored Environment

    The heart of Toad Bakery is undoubtedly its bespoke design. Nick Tudor constructed a striking floor-to-ceiling structure using sweet chestnut timber sourced from near his Essex workshop. This timber installation includes five slanted racks that display the bakery’s renowned slow-fermented bread—a beautiful marriage of form and function. The design cleverly draws inspiration from catering speed racks utilized in the original Camberwell location, creating continuity between the two establishments.

    Next to the timber structure, a polished stainless steel counter takes center stage. Fabricated by local metalworker James Williamson, this counter adds a sleek contrast to the warmth of the wood, stretching all the way to the entrance. Tudor purposefully designed the glass-fronted counter with three levels of freshly baked goods, allowing patrons in line an enticing “window shopping” experience before making their selections.

    Tudor’s counter design aims to alleviate a common dilemma faced by patrons: choice paralysis. The elongated form provides ample time for customers to peruse their options without feeling rushed. Tudor deliberately chose to showcase the pencil and chalk lines from the timber production process, as well as the grade markings on the stainless steel.     “I wanted to celebrate the activity of the bakery,” Tudor explains, emphasizing the importance of observing the effort behind the creations.     Interestingly, Tudor’s inspiration extended beyond the culinary world. A 15th-century illuminated manuscript depicting the construction of Noah’s Ark served as a visual guide. Rather than focusing solely on a completed product, the manuscript showcases the collaborative efforts of workers—cutting timber, lifting beams, and constructing something beautiful together. This thematic underpinning influenced the design concept for the bakery, revealing Tudor’s deep commitment to collaboration and craftsmanship.

Recently, architects from Korea designed a bakery with monolithic brick volumes, evoking the ruins of an undiscovered civilization.
